Nothing is better topped on a hot baked potato than cold creamy sour cream and onion dip.
This recipe is great mixed in with mashed potatoes, topped on a baked potato, or used for dipping. Think vegetables, chips, chicken wings or for bonus points Pork Ribs. Ingredients and recipe below.
- 1/2 cup good quality mayonnaise
- 1/2 cup good quality sour cream
- 1/2 medium yellow onion
- 2 garlic cloves
- 2-4 green onion chives
- freshly ground salt and black pepper
First, crush garlic and set aside to promote the formation of allicin. Next, preheat a pan and a few dashes of oil. Dice the onion into fine pieces and add to hot pan. Cook onion stirring occasionally until translucent and golden in color. Finely mince the crushed garlic and add to the pan containing the cooked onions. Stir and continue to heat for a minute or two. Turn off heat as garlic becomes fragrant and begins to brown. Next, dice the green onion chives. Lastly, mix the mayonnaise and sour cream together in a bowl. Finish by stirring in the onion and garlic. Do not forget to add salt and pepper to taste. Save the diced green onion chives to top and finish the dish. Cool before serving.
Allicin has been found to reduce inflammation and provide antioxidant benefits. When the clove is crushed or chopped, an enzyme, alliinase, is released.
