This red tomato sauce sings with fresh bright flavor. The beauty lies in its simplicity. There are just a few ingredients, it is of the utmost importance to use the best available. If done correctly one can taste the harmony.
The below is a recommended starting point. Final proportions should be adjusted to taste.
- 28 ounce can Italian San Marzano whole peeled tomatoes
- 1 tablespoon extra virgin olive oil
- ½ cup loosely packed fresh basil
- 1 teaspoon Diamond Crystal Kosher salt
Mix ingredients. Season to taste.
My hack is to blend the tomatoes right in the can.
First drain off a bit of liquid keeping the tomatoes in the can. Next add basil, oil and salt. Lastly, insert an electric handheld blender and zip to combine until velvety and smooth. Taste the sauce and adjust oil, basil, and salt until perfect.
Sauce is highly subjective. Start with the basic recipe described here. Over time adjust to personal preference with regard to thickness, salt, and basil ratios. Lastly experiment with additional flavors being careful not to throw the sauce’s delicate balance.
Use these recipes and techniques to make crisp airy dough and bright fresh sauce at home. In fact, with a little practice all other pizza will be inferior. Be warned you may never again see your pizza delivery guy.
